
Classic Spaghetti Carbonara Recipe ๐ฎ๐น๐
Ingredients
- 8 oz 225g spaghetti
- 2 large eggs
- ยฝ cup 50g grated Parmesan cheese (or Pecorino Romano)
- 4 oz 115g pancetta or bacon, diced
- 2 cloves garlic minced (optional, but adds great flavor)
- 1 tbsp olive oil
- Salt & freshly ground black pepper to taste
- Fresh parsley chopped for garnish (optional)
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the spaghetti until al dente (firm to the bite). Reserve ยฝ cup of pasta water, then drain.
Prepare the Sauce:
- In a bowl, whisk together eggs, cheese, and black pepper until smooth.
Cook the Pancetta (or Bacon):
- Heat olive oil in a pan over medium heat.
- Add pancetta and cook until crispy.
- (Optional: Add garlic and sautรฉ for 30 seconds, then remove.)
Combine Everything:
- Reduce the heat and add the hot drained spaghetti to the pan. Toss to coat with the pancetta fat.
- Remove the pan from heat and quickly mix in the egg and cheese mixture, tossing continuously to create a creamy sauce.
- Add a little pasta water (1-2 tbsp at a time) until the sauce reaches a smooth consistency.
Serve Immediately:
- Top with extra Parmesan, black pepper, and fresh parsley.
- Enjoy with garlic bread and a side salad! ๐
