Ingredients
  

  • 8 oz 225g spaghetti
  • 2 large eggs
  • ยฝ cup 50g grated Parmesan cheese (or Pecorino Romano)
  • 4 oz 115g pancetta or bacon, diced
  • 2 cloves garlic minced (optional, but adds great flavor)
  • 1 tbsp olive oil
  • Salt & freshly ground black pepper to taste
  • Fresh parsley chopped for garnish (optional)

Instructions
 

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook the spaghetti until al dente (firm to the bite). Reserve ยฝ cup of pasta water, then drain.

Prepare the Sauce:

  • In a bowl, whisk together eggs, cheese, and black pepper until smooth.

Cook the Pancetta (or Bacon):

  • Heat olive oil in a pan over medium heat.
  • Add pancetta and cook until crispy.
  • (Optional: Add garlic and sautรฉ for 30 seconds, then remove.)

Combine Everything:

  • Reduce the heat and add the hot drained spaghetti to the pan. Toss to coat with the pancetta fat.
  • Remove the pan from heat and quickly mix in the egg and cheese mixture, tossing continuously to create a creamy sauce.
  • Add a little pasta water (1-2 tbsp at a time) until the sauce reaches a smooth consistency.

Serve Immediately:

  • Top with extra Parmesan, black pepper, and fresh parsley.
  • Enjoy with garlic bread and a side salad! ๐Ÿ˜
