Ingredients
  

  • 1 package of instant ramen noodles available in most supermarkets
  • 4 cups chicken broth or vegetable broth for a vegetarian option
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil optional
  • 1 boiled egg optional
  • 1/4 cup green onions chopped
  • 1/4 cup spinach or other leafy greens like kale or bok choy
  • Optional toppings: sliced mushrooms corn, seaweed (nori), or shredded carrots

Instructions
 

  • Cook the noodles: Bring water to a boil in a pot. Add the ramen noodles and cook according to the instructions on the package (usually 3-4 minutes). Drain the noodles and set them aside.
  • Prepare the broth: In the same pot, add the chicken or vegetable broth. Bring it to a simmer over medium heat. Stir in the soy sauce and sesame oil (if using). Add spinach or other greens and cook for another 1-2 minutes until softened.
  • Boil the egg: For a soft-boiled egg, place it in boiling water for 7-8 minutes, then cool it under cold water and peel. Slice it in half.
  • Assemble the ramen: Place the cooked noodles in a bowl. Pour the hot broth with the greens over the noodles. Add the boiled egg, green onions, and any other toppings you like (mushrooms, corn, or nori are great options).
